Port wine ice cream

How amazing is the food in Portugal, not forgetting of course the special and flavoured wines…the most famous of which is the “vinho do Porto”. There are so many desserts, chocolates and biscuits made with this excellent liqueur, and now we want to propose the ice cream.

Ingredients:

  • 375 ml milk
  • 375 ml soured cream
  • 180 g sugar
  • 3 large eggs
  • Flavouring (such as vanilla or orange)
  • Port wine

Preparation:

In a large saucepan bring the milk, cream and sugar to the boil over a medium heat, stirring often. As soon as it starts boiling, turn off the heat. In a large bowl, add the eggs and blend in a 1/3 of the hot mixture. Put the saucepan back on the heat and cook stirring constantly for about 20 minutes, until the mixture thickens enough to thickly coat a metal spoon. Take it off the heat, cover and leave it to cool in the fridge for at least three hours, but no more than 24 hours. Blend the port into the frozen mixture and pour it into a container for ice cream. Check the consistency of the mixture and if necessary put it in the freezer for another hour before serving. We usually take it out of the freezer few minutes before serving, but it depends on personal taste.
