Sweet & sour chicken with sherry

If the idea of a chicken served with a sweet & sour sauce of peppers, oranges, onions and a delicate flavour of sherry served with basmati rice makes you hungry, then this recipe is for you!

Ingredients:

  • 500 g chicken breast
  • 2 tbsp extra virgin olive oil
  • 1 onion
  • 1 red pepper
  • 1 garlic clove
  • 100 ml sherry /red vermouth
  • 2 tbsp soya sauce
  • 1 tbsp honey
  • 1 tbsp potato starch
  • 2 oranges

Preparation:

In a pan, brown the chicken in some oil for 3 minutes. Cut the pepper into strips, the onion into rings, and finely chop the garlic. Add the vegetables to the pan and fry for other 5-6 minutes until the chicken breast is well cooked. Mix the soy sauce, sherry, honey and potato starch together. Pour the mixture over the chicken and cook, stirring often, until the sauce becomes fairly thick. Peel the oranges, chop and add to the chicken. Cook everything for a further 2 minutes and then serve.

Vegetarian variation: Replace the chicken with tofu cubes and serve with Basmati rice
