Lentil soup with bacon and red wine

A lentil soup with bacon and red wine. Spiritasty and super-tasty. What else?

Ingredients (for 2):

  • 1 can of lentils (380 g)
  • 1 carrot
  • 1/2 onion
  • 1 garlic clove
  • 1 handful of bacon cut into pieces (or lardons)
  • 1 teaspoon of chicken broth (powder)
  • 6 cl of red wine
  • 25 cl of tomato sauce
  • 1 tablespoon of mixed herbs of your choice (origan, thyme, rosemary,…)

Peel and chop onion, carrot and garlic.

Heat a large pan on medium heat and cook the bacon for 1 minute then add chopped vegetables. Cook for 2-3 minutes.

Add lentils, tomato sauce and herbs. Mix well, simmer and cover for 5 minutes.

Next add red wine, 40 cl of water, chicken broth. Cover partially and cook on low heat for about 30 minutes.

With a hand blender purée your soup to the desired texture (you might want to keep a spoon of the lentils apart to decorate).

Serve hot with a dash of evo oil.
