Red wine spaghetti

I’ve been willing to make this pasta for a while now: Red Wine Spaghetti, but they also call it Drunken Pasta. Yes, the pasta get drunk (but you don’t!) because it literally cooks in wine and takes a beautiful purple colour.


  • 200 g of spaghetti
  • 2 garlic cloves
  • evo oil
  • 20 cl of red wine
  • parmesan cheese
  • chili pepper flakes (optional)
  • salt, pepper



Bring a pot of salted water to a boil. In the meantime, heat oil, garlic and chili pepper in a skillet on low heat for about 5 minutes.

Pour wine in the skillet and increase heat to medium heat.

Add pasta to boiling water and cook only for 5 minutes. Drain well then add the pasta to the skillet. Allow the pasta to finish cooking and absorb the wine for a few more minutes. Pasta should be al dente. Season with salt and pepper to taste.

Serve with grated parmesan cheese.
