Once you’ve realised how easy it is to make muffins, you won’t be able to stop! It usually takes about 10 minutes to prepare and 20 to bake. So you keep experimenting and one day you find yourself making banana muffins because they are a must. And what alcohol goes better with banana than rum? In my opinion: none. Let’s make Banana Rum Muffins!
Ingredients (for 12 muffins):
- 3 bananas
- 160 g of flour
- 75 g of sugar
- 1 egg
- 70 g of melted butter
- 4 spoons of rum (dark rum preferred)
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 40 g of chocolate chips
- 1 pinch of salt
Preheat oven to 180°C.
In a large bowl, mash bananas with a fork and add sugar and egg and mix well.
Add melted butter and rum and blend together.
Next, add in one time flour, baking powder, baking soda and salt. Mix simply with a fork.
Last touch: add chocolate chips and mix again gently.
Prepare your muffin tray with paper cups and fill them with the mixture.
Bake in oven for about 20 minutes.
Tips: Instead of chocolate chips you can add a piece of chocolate in the middle to obtain a melted chocolate heart!
