Cabbage, red onions and gin

I was looking out for ideas to cook my cabbage the other day and I found out that cabbage goes extremely well with juniper berries and that is great news because I just happened to buy a bottle of Gin (for the Gin and Lemon Cake recipe) which has a juniper flavour.

This Cabbage, Red Onions and Gin recipe is a great side dish to warm you up!

Ingredients (serving 2):

  • 1/2 savoy cabbage
  • 1/2 red onion
  • 1 glass of gin
  • 10 cl of cream
  • 1 garlic clove
  • 1 slice of butter
  • 1 spoon extra virgin olive oil
  • salt, pepper

 

Preparation:

Cut onions into thin slices.

Heat butter and oil in a wok or a large skillet over medium heat and add onions. Cook until softened.

Wash and shred cabbage then add it to the wok with a crushed garlic clove. Stir for 2 minutes.

Pour gin over cabbage and bring to a boil, stirring, until almost all gin has evaporated.

Reduce heat to low, cover wok and cook for about 20 minutes, stirring from time to time (add some water if necessary).

Season with salt and pepper to taste, add cream and stir for another minute. Serve immediately.

Tips: You can serve this Cabbage, Red Onions and Gin as a side dish with a lemon turkey escalope, or rice for a vegetarian meal or even add potatoes and lardons for a complete meal.
