Living in Italy, it’s very common to eat pasta and risotto every week or so, but this time I decided to make fried rice for a change, plus I had the perfect ingredients for the season: pumpkin and chestnuts! The result is an autumnal and savoury fried rice you should definitely try.
Ingredients (serving 2 people):
- 100 g of basmati rice
- 100 g of pumpkin (peeled)
- 50 g of chestnuts (cooked and peeled)
- 1 shot of vodka
- evo oil
Preheat a wok on low heat with some oil and put the pumpkin cut into small dice. Sprinkle with rosemary.
After a few minutes add salt, pepper, 2 spoons of water, vodka and leave the pumpkin to cook gently.
In the meantime, cook your rice as indicated on the package.
Add lardons and chestnuts in small pieces to the pumpkin (it should be tender by now) and stir for another 5 minutes.
When the rice is ready, add it to the wok and fry it on medium heat for 1 minute stirring well all the ingredients. Your pumpkin and vodka fried rice is ready!
